Summary: The study demonstrated that cinnamon extract exhibited high antibacterial activity against Vibrio parahaemolyticus and Escherichia coli, effectively inhibiting biofilm formation and eradicating mature biofilms. The extract also significantly reduced metabolic activities and EPS secretion in biofilms, leading to thinner EPS and looser biofilm structure compared to untreated controls.
