Developing quality and safety of cloudy mango juices by gum Arabic encapsulated a droplet of vanillin embedded in mango oil along with ultrasonic for longer shelf-life

Summary: Cloudy juices, especially mango juice, can benefit from hydrocolloid flavor emulsions to improve their cloud stability, antioxidant capacity, and safety during storage. The ultrasound-assisted emulsion (GA-VA/MO-S) showed the highest zeta potentials and significantly enhanced the quality and safety of CMJ compared to other treatments. Encapsulation efficiency and droplet size were key parameters for achieving stability and extending the shelf-life of CMJ.

Summary: Distinct virus-like symptoms in naturally infected eggplants in the Kafr El-Sheikh Governorate in Egypt were suspected to be caused by the Alfalfa mosaic virus (AMV). Six out of 40 symptomatic leaf samples tested positive for AMV, while no AMV was found in the 10 leaf samples without symptoms. Using melatonin and salicylic acid increased the resistance of eggplants to AMV infection and reduced oxidative damage.
