Impact of extraction condition on the yield and molecular characteristics of collagen from Asian bullfrog (Rana tigerina) skin

Summary: This study is the first to report the extraction of acid-soluble collagen and pepsin-soluble collagen from Asian bullfrog skin. The results show that pepsin-soluble collagen has higher extraction yield and recovery compared to acid-soluble collagen. The extracted collagens have a compact structure with a triple helical structure and similar amino acid composition. The optimized extraction conditions provide a high yield with minimal adverse effects on collagen properties and molecular characteristics.

Summary: Clown featherback skin can serve as a good source of aquatic collagen and ultrasound-assisted extraction can significantly improve the extraction efficiency of collagen. However, it may lead to a decrease in purity. Ultrasound-induced protein degradation does not have adverse effects on the molecular structure of collagen.

Meat quality and Raman spectroscopic characterization of Korat hybrid chicken obtained from various rearing periods

Summary: The study characterized the physico-chemical properties of Korat hybrid chicken (KC) meat and found that protein content, pH, water-holding capacity, cholesterol, and nucleotide content varied with chicken age. Older birds had higher shear force values and total collagen content, while Raman spectral data showed correlations between beta-sheet structure, amide content, and shear force values in KC meat. The study suggests potential markers for evaluating KC meat quality.

Summary: Consumers' increasing interest in the health and nutrition of meat products has led to a willingness to pay more for naturally produced meat that meets high standards and animal welfare. This study examined the muscles of Ross 308 chickens in an ecological system, focusing on the influence of sex on growth performance, carcass traits, meat quality, fatty acid profile, and histological traits. Results confirmed that sex has a significant impact on the analyzed parameters of pectoral muscles in chickens raised in an organic system.

Effect of furcellaran incorporation on gel properties of sardine surimi

Summary: The addition of furcellaran significantly improved the gel properties of sardine surimi by enhancing mechanical properties and reducing expressible moisture content. It also enhanced the interconnection between chains. Moreover, an appropriate level of furcellaran can improve the sensory properties of the gel, but high content may lead to a decrease in overall likeness score.
