The Effect of the Liposomal Encapsulated Saffron Extract on the Physicochemical Properties of a Functional Ricotta Cheese

Summary: This study examined the encapsulation of saffron extract using different concentrations of soy lecithin and tested the physicochemical and textural properties of the encapsulated extract in ricotta cheese. Summary: This study investigated the antioxidant and antibacterial activities of broccoli sprout extract (BSE) nanoliposomes co-encapsulated into basil seeds gum (BSG). The results showed that the BSE-loaded nanoliposomes and nano-capsules exhibited good stability and uniform particle size distribution, and had potential interest to be used as natural antioxidants and preservatives for food applications.

A novel glycoprotein emulsion using high-denatured peanut protein and sesbania gum via cold plasma for encapsulation of β-carotene

Summary: A glycoprotein emulsion was prepared using high-denatured peanut protein isolate and sesbania gum to stabilize the oil-water interface, showing better stability compared to the peanut protein isolate emulsion. The emulsion with a 5% protein addition was selected for embedding beta-carotene with an encapsulation efficiency of >= 97.0%. This glycoprotein emulsion enhanced the sustained release effect and bioaccessibility of beta-carotene during gastrointestinal digestion. The potential applications of glycoprotein emulsion in the delivery system for fat-soluble nutrients were highlighted.

Summary: Grass pea protein isolate (GPPI)/Alyssum homolocarpum seed gum (AHSG) complex nanoparticles were used as a wall material for encapsulation of Curcumin. Two fabrication methods were compared, with Type 2 capsules showing higher encapsulation efficiency and loading capacity for Cur. The major driving forces for particle formation and Cur encapsulation were found to be hydrogen bonding, electrostatic attraction, and hydrophobic interaction. Encapsulated Cur showed improved antioxidant activity, light and thermal stability, and delayed release under in-vitro gastrointestinal conditions.
