Biofortification Strategies to Improve Iron Concentrations in Potato Tubers: Lessons and Future Opportunities

Summary: Iron deficiency is a serious global issue, particularly in developing countries. Developing iron biofortified potatoes could provide a sustainable solution to this problem. While agronomic practices may not be very effective for iron biofortification of potatoes, genetic approaches show promise due to extensive genetic variability in the potato gene pool.
