Effect of two-step enzymatic hydrolysis on the antioxidant properties and proteomics of hydrolysates of milk protein concentrate

Identification of nutritional values of the fermentative extract from the mixture of Stereum hirsutum mycelial substrates and ginseng extracts

Summary: This study investigated the preparation method of extract by solid-state fermentation (SSF) of Stereum hirsutum mycelial substrate mixed with ginseng extracts (GE) and examined the changes of water-soluble nutritional components (WSNC) and antioxidant capacity in the extract using a simulated gastrointestinal digestion model. The results showed that the substrates contained numerous WSNC and antioxidants during the fermentation process, and the digested samples had higher levels of WSNC and antioxidant activity compared to undigested samples. Furthermore, significant amounts of free amino acids (FAA) and a minor ginsenoside 20 (S)-protopanaxadiol (PPD) were detected in the digested samples. These findings suggest that the extract prepared by SSF of S. hirsutum mycelial substrate mixed with GE can be used as a potential functional food and antioxidant.
