Effect of Kenaf Fibre as Reinforcing Fillers in Corn Starch-Based Biocomposite Film

M. D. Hazrol et al.

Summary: Biocomposite films were prepared using corn starch reinforced with multi-scale kenaf fibre as a filler. The addition of kenaf fibre improved the thickness, weight, and density of the films, while causing slight reductions in moisture content, water absorption, and solubility rating. Kenaf fibre reinforcement increased the tensile strength, Young's modulus, and elongation at break of the films, with optimal results achieved at a fibre content of 6%.

Effects of endogenous proteins and lipids on structural, thermal, rheological, and pasting properties and digestibility of adlay seed (Coix lacryma-jobi L.) starch

Yangyue Ding et al.

Summary: This research found that the effects of endogenous proteins on adlay seed starch were more significant than those of endogenous lipids. Removal of proteins and lipids had noticeable impacts on the physicochemical properties of starch, leading to a decrease in thermal stability.

Impact of sage seed gum and whey protein concentrate on the functional properties and retrogradation behavior of native wheat starch gel

Negar Mirnezhad Anbarani et al.

Summary: The substitution of native wheat starch (NWS) with sage seed gum (SSG) enhanced the physicochemical properties and cold storage stability of NWS gel, while substitution with whey protein concentrate (WPC) decreased the swelling power and viscosity of NWS gel. Additionally, the interactions between SSG and WPC led to a significant decrease in the retrogradation kinetics rate of NWS gel.

Cress seed gum improves rheological, textural and physicochemical properties of native wheat starch-sucrose mixture

Shokufeh Taziki Shams-abadi et al.

Summary: This study investigated the impact of different substitution levels of cress seed gum (CSG) and sucrose (SUC) on the rheological properties, textural attributes, syneresis, FTIR, and microstructure of native wheat starch (NWS) gel. The results showed that CSG had a positive effect on modifying the properties of NWS-SUC mixed gels, resulting in higher apparent viscosity and consistency coefficient. The addition of CSG greatly decreased hardness and consistency during storage at 4 degrees C for 14 days, while in the presence of SUC these values slightly decreased.
