Summary: Nanofibrils prepared from whey protein isolate (WPNFs) via hydrothermal method efficiently stabilized high internal phase Pickering emulsion (HIPPEs) with excellent stability and solid-like rheological properties. WPNFs were found to enhance oil binding capacity and antioxidant activity, providing a novel and efficient method for preparing WPNFs to stabilize HIPPEs with tunable rheology.

Summary: This study developed and characterized food-grade oil-in-water olive oil Pickering emulsions (OOPEs) stabilized by hybrid starch/0-cyclodextrin nanoparticles (starch/0-CD NPs). The OOPEs demonstrated improved oxidative and storage stability compared to pure olive oil. Animal experiments showed that OOPEs modulated the gut microbiota, increasing the abundance of health-promoting bacteria.

Interfacial properties, physicochemical stability, and technological properties of infant formula emulsions are discussed in relation to the interactions of emulsifiers at interfaces and in bulk under various processing conditions.

Effect of emulsification techniques on the distribution of components on the surface of microparticles obtained by spray drying

Summary: The study evaluated the effect of different emulsification techniques on the surface distribution, microstructure, and physicochemical properties of encapsulated β-carotene microparticles. Microparticles provided by the microfluidizer could help in designing fast-hydration and dispersion powder products by spray drying.
