Summary: Virgin coconut oil (VCO) prepared by traditional method (HVCO) showed greater anti-inflammatory efficacy compared to VCO prepared by simple fermentation process (FVCO). This difference in efficacy is attributed to variations in phenolic profile revealed by LC-MS analysis. HVCO is suggested as a potential food supplement to reduce the incidence of degenerative diseases.
