Can hydro-thermo-mechanical treatment by instant controlled pressure-drop (DIC) be used as short time roasting process? Effect of processing parameters on sensory, physical, functional, and color attributes of Egyptian carob powder

Summary: This study focused on manufacturing cocoa-like powder from Egyptian carob through a texturing/roasting process. By controlling the chemical transformations, optimizing processing parameters, and using response surface methodology, the desired sensory attributes, physical and functional properties, and color characteristics were achieved. By utilizing DIC-texturing/roasting at specific pressure and processing time, the quality of the carob powder was improved significantly.

Lactose-free skim milk and prebiotics as carrier agents of Bifidobacterium BB-12 microencapsulation: physicochemical properties, survival during storage and in vitro gastrointestinal condition behaviour

Summary: The study found that spray-dried powder 2 had the highest encapsulation yield and bifidobacteria viability, while powder 3 showed the best probiotic survival rate under in vitro-simulated gastrointestinal conditions. Powders containing prebiotics showed great potential for microencapsulation of Bifidobacterium BB-12 and maintenance of cell viability in lactose-free dairy products.

Micro wet milling and spray drying of whole mandarin powder and its characterization
