Targeted phenolic profile of radler beers by HPLC-ESI-MS/MS: the added value of hesperidin to beer antioxidants

Summary: 5-HTP is a natural component found in both drugs and dietary supplements, with important roles in neurologic and metabolic diseases. Its synthesis from tryptophan is a limiting step in serotonin and melatonin biosynthesis. Methods such as chemical synthesis and microbial production can be used to prepare 5-HTP for the treatment of various conditions including depression, anxiety, and sleep disorders.

Composition of bound polyphenols from carrot dietary fiber and its in vivo and in vitro antioxidant activity

Summary: The study used UPLC-ESI-QTOF-MS/MS to qualitatively analyze bound polyphenols in carrot dietary fiber, and determined the in vitro antioxidant activity through various assays. The results showed that CDF-PP could scavenge radicals in a dose dependent manner and exhibited significant ROS scavenging activity in living Caenorhabditis elegans, suggesting it as a promising source of antioxidants.

Summary: Beer antioxidants mainly come from malts, and the phenolic antioxidant content and types in Pale Ale beers are influenced by the percentage of dark malt used. Dealcoholization by osmotic distillation has a weak impact on the phenolic fraction, with the content and antioxidant activity of phenolic compounds in beers primarily influenced by the type of malt used.
