Effects of adding spices with antioxidants compounds in red ale style craft beer: A simplex-centroid mixture design approach

Roberto Campos Nunes Filho et al.

Summary: The study developed a Red Ale style craft beer with spices such as turmeric, black pepper, and aroma hops, and evaluated total phenolic compounds and antioxidant activity through a mixture design. The addition of spice extracts influenced the product's shelf-life, but did not affect other physicochemical parameters.

Effects of food matrix and probiotics on the bioavailability of curcumin in different nanoformulations

Juan Han et al.

Summary: This study demonstrated that fasting treatment and co-ingestion with sugar can enhance the bioavailability of curcumin in Cur-NEs and Cur-SWNTs, respectively. Ingesting regular kibble along with curcumin can reduce absorption, and milk co-ingestion with Cur-NE is not recommended. The presence of Bb-12 in the gut can reduce curcumin bioavailability, which can be attenuated by SWNTs and NLCs nanoformulations but not NEs. The protective effects of SWNTs and NLCs against curcumin degradation by Bb-12 were identified as the reason for this difference.

Influence of Moderate to High Salinity on the Phytochemical Profiles of Two Salinity-Tolerant Spinach Genotypes

Fakir Shahidullah Tareq et al.

Summary: This study investigated the effects of salinity and potassium levels on phenolic profiles and soluble sugars in spinach, finding that as salinity increased, the levels of phenolic compounds and antioxidant capacity decreased. There was a strong correlation between HPLC and the FC assay, but a weaker correlation with the FRAP assay. Caution is advised when interpreting colorimetric assay results for phenolics quantification.
