Monitoring microstructural changes and moisture distribution of dry-cured pork: a combined confocal laser scanning microscopy and hyperspectral imaging study

Xiao-Yu Tian et al.

Summary: This study combined hyperspectral imaging with confocal laser scanning microscopy to examine the impact of processing on microstructural changes and moisture evolution. The models established using reflectance spectra features showed good ability to predict moisture content, with both full-band wavelength and selected optimum wavelengths yielding reliable results. HSI and CLSM were able to reveal moisture distribution and structural differences in microstructure, offering a reliable means for assessing chemical and structural changes in food products during processing.

Quantification of deltamethrin residues in wheat by Ag@ZnO NFs-based surface-enhanced Raman spectroscopy coupling chemometric models

Tianhui Jiao et al.

Summary: In this study, a nano-sensor using SERS-active silver nanoparticles-plated-zinc oxide nanoflowers was employed to quantify deltamethrin in wheat rapidly and sensitively. By utilizing mean centering coupled with successive projection algorithm-partial least squares regression, optimal predictive performance was achieved with low limit of detection, high recovery rates, and low relative standard deviation. The results suggested that the method could effectively quantify deltamethrin residue levels in wheat.

Development and characterization of chitosan films carrying Artemisia campestris antioxidants for potential use as active food packaging materials

Salma Moalla et al.

Summary: Active food packaging films based on chitosan enriched with Artemisia campestris extract were developed, improving the physical, mechanical, thermal, and antioxidant properties of the films. The addition of ACHE and ACEO enhanced water resistance but reduced tensile strength and film extensibility. Incorporating A. campestris extract notably increased the antioxidant and UV-Vis barrier properties of the chitosan films, making them potential alternatives for food packaging.
