Effect of two-step enzymatic hydrolysis on the antioxidant properties and proteomics of hydrolysates of milk protein concentrate

Qiang Cui et al.

Summary: This study examined the antioxidant activity and peptide profiles of four extensive hydrolysates of milk protein concentrate using a two-step enzymatic method. The results showed increased radical-scavenging capacity in the hydrolysates, with the main bioactive peptides identified through mass spectrometry and bioinformatics. This research provides useful information on the antioxidant properties of extensive hydrolysates of milk protein concentrate.

Changes of antioxidative activities and peptidomic patterns of Auxenochlorella pyrenoidosa protein hydrolysates: Effects of enzymatic hydrolysis and decoloration processes

Wenhan Zhang et al.

Summary: This study investigated the effects of enzymatic hydrolysis and activated carbon decoloration on antioxidative activities and peptidomic patterns of microalgae protein hydrolysates using a peptidomic approach. Activated carbon decoloration significantly increased color lightness but decreased antioxidative activities and relative abundances of peptides, particularly aromatic amino acid containing peptides. Understanding the dynamics of production processes at a molecular scale can enhance the production and quality control of bioactive peptides from Auxenochlorella pyrenoidosa.

Technological and bioactive properties of wheat glutenin hydrolysates prepared with various commercial proteases

Fatih Bozkurt et al.

Summary: This study investigated the effects of different types of proteolytic enzymes on the technological and bioactive properties of glutenin hydrolysates. The results showed that hydrolysates with lower degree of hydrolysis had superior technological properties, while those with higher degree of hydrolysis exhibited better antioxidant and anti-diabetic activities. Additionally, the hydrolysates showed no cytotoxic effects on HEK293 healthy cell line but exhibited cytotoxic effects on MIA PaCa 2 and CaCo 2 cancer cell lines.

Application of ultrasound in stabilizing of Antarctic krill oil by modified chickpea protein isolate and ginseng saponin

Luping Xu et al.

Summary: Ultrasound pretreatment enhanced the binding affinity of chickpea protein isolate to ginseng saponin, leading to improved oxidative stability of emulsions. The addition of ginseng saponin increased the α-helix content and decreased other secondary structure contents in the protein. Overall, ultrasound can be successfully utilized to design emulsions with enhanced stability and nutritional properties in food systems.
