Sodium Caseinate and Acetylated Mung Bean Starch for the Encapsulation of Lutein: Enhanced Solubility and Stability of Lutein

Summary: This study investigated the preparation and properties of lutein emulsions and microcapsules using different ratios of sodium caseinate to acetylated mung bean starch. The results showed that increasing the sodium caseinate content improved the emulsion effect and the yield and solubility of microcapsules, while reducing the particle size. The encapsulation efficiency of lutein microcapsules ranged from 69.72% to 89.44%. The thermal analysis revealed an endothermic transition temperature of approximately 125 degrees Celsius for the lutein microcapsules. Microcapsules with sodium caseinate as the single wall material exhibited the lowest stability.

Summary: Polymerization-induced self-assembly (PISA) is a powerful technique for preparing diblock copolymer nano-objects in various solvents. A non-aqueous emulsion polymerization formulation was reported here, producing sterically-stabilized spherical nanoparticles at a relatively high temperature with long precursor chains for colloidal stability. Despite challenges in accurate sizing of nanoparticles by TEM, introducing a third block to covalently crosslink the nanoparticle cores enabled identification of spherical morphology. Such nanoparticles also proved effective in producing oil-in-water Pickering emulsions.
