Comparison of pyrazines formation in methionine/glucose and corresponding Amadori rearrangement product model

Summary: The study investigated the generation of pyrazines in a binary methionine/glucose mixture and its corresponding methionine/glucose-derived Amadori rearrangement product (MG-ARP). Results showed that MG-ARP produced more methional but less pyrazines compared to the Met/Glc model. Methylglyoxal was found to be effective in pyrazine formation during MG-ARP degradation, while glyoxal did not effectively participate in the process.

Summary: Ellagic acid has a dual effect on the formation of pyrazines in the xylose-glycine Maillard reaction, inhibiting or promoting depending on the addition time and system pH. Adding ellagic acid during the accumulation period of Amadori compounds inhibits pyrazine formation, while its oxidation can promote pyrazine formation when added at the beginning of the Maillard system with oxidizing substances present.

Summary: Additional DL-methionine did not affect the degradation rate of the methionine-glucose-derived Amadori rearrangement product, but played a role in subsequent reactions, resulting in a decrease in C-6-alpha-dicarbonyl compounds and facilitating the formation of glyoxal and methylglyoxal. The effect of Met addition was dependent on reaction temperature and contributed to the acceleration of browning formation by improving the formation of color precursors glyoxal and methylglyoxal.
