Challenges in reducing sodium in traditional fermented foods include the potential growth of pathogenic bacteria, formation of hazardous chemicals, flavor deficiency, and texture deterioration. Various physical, chemical, and biological strategies are being discussed to address these challenges and improve the quality and safety of low-sodium fermented foods.
