Mid infrared spectroscopy combined with chemometric tools for the identification of canned tuna species in brine

Characterization of lipid profiling in three parts (muscle, head and viscera) of tilapia (Oreochromis niloticus) using lipidomics with UPLC-ESI-Q-TOF-MS

Summary: A comprehensive lipidomic evaluation was conducted on tilapia muscle, head, and viscera, revealing higher lipid content in head and viscera compared to muscle. The study showed that polyunsaturated fatty acids had higher percentages in phospholipids than in triacylglycerols, with C52:2 and C52:3 identified as the most abundant triacylglycerols. Ultra-performance liquid chromatography-quadrupole time-of-flight-mass spectrometry identified 622, 530, and 513 lipids in the muscle, head, and viscera respectively, with five fatty acids and 33 lipid species considered as potential biomarkers.
