Evaluation of Enterococcus faecium NRRL B-2354 as a surrogate for Salmonella enterica in milk powders at different storage times and temperatures

Xinyao Wei et al.

Summary: This study found that the storage time has little effect on the thermal resistance of microorganisms in low-moisture foods. The heat resistance kinetics of Salmonella in milk powders at 85 degrees Celsius were not affected by storage time within 90 days. However, Enterococcus faecium showed higher D-values, indicating it is a conservative surrogate for Salmonella. This study provides valuable information for establishing process validation for the pasteurization of milk powders.

Survival of Salmonella and Enterococcus faecium in high fructose corn syrup and honey at room temperature (22 °C)

Jaza Alshammari et al.

Summary: The study showed that Salmonella and its surrogate cannot survive in honey and high fructose corn syrup at room temperature for more than a month. The high osmotic pressure of these liquid sugars is likely the main reason for bacterial death. This provides important information for developing microbial-safe strategies in the preparation or storage of low-moisture foods.

Evaluation of Enterococcus faecium NRRL B-2354 as a surrogate for Salmonella in ground black pepper at different water activities

Xinyao Wei et al.

Summary: This study investigated the impact of water activity on the thermal inactivation kinetics of Salmonella and Enterococcus faecium in ground black pepper, finding significant negative effects of water activity and temperature on the thermal resistance of these bacteria. E. faecium was identified as a suitable surrogate for Salmonella in thermal processing validation due to its higher D-values at all three water activities.

Desiccation and thermal resistance of Salmonella and Enterococcus faecium NRRL B-2354 in almond meal as impacted by water activity and storage temperature

Mei-Jun Zhu et al.

Summary: The study found that Salmonella in almond meal could remain stable for 1 year at 4°C regardless of water activity, but may be affected to some extent at 22°C. The thermal tolerance of Salmonella and Enterococcus faecium in almond meal was influenced by water activity, showing an inverse relationship. During thermal pasteurization, Enterococcus faecium proved to be a suitable surrogate for Salmonella.

Thermal inactivation of Salmonella Enteritidis PT30 in ground cinnamon as influenced by water activity and temperature

Yucen Xie et al.

Summary: This study investigated the thermal resistance of Salmonella in ground cinnamon and found that milder thermal treatments can be used for controlling Salmonella in cinnamon powder, compared to other low-moisture foods. The influence of water activity and treatment temperature on the thermal inactivation of Salmonella in spices was explored, providing insights into more effective thermal treatment methods. The study suggests that the natural antimicrobial compounds in cinnamon may reduce the intensity of thermal treatments needed for pathogenic bacteria, contributing to better retention of product quality.

Moisture Content of Bacterial Cells Determines Thermal Resistance of Salmonella enterica Serotype Enteritidis PT 30

Yucen Xie et al.

Summary: This study established a logarithmic relationship between the thermal death time (D-value) of S. Enteritidis PT 30 and the moisture content of the bacterial cells. The amount of moisture in Salmonella spp. was found to be a determining factor of its ability to resist thermal inactivation in dry environments. The findings may guide future designs of industrial thermal processes for the control of Salmonella strains in low-moisture foods.
