Summary: Outbreaks and recalls associated with foods containing spices indicate the need for risk assessment of Salmonella in spices. This study evaluated the survival and thermal resistance of Salmonella and Enterococcus faecium in chili, cinnamon, and black pepper at different water activity and temperature conditions, and found that chili powder exhibited the strongest antimicrobial effect.

The influence of water activity and treatment temperature on the thermal inactivation of Salmonella in spices was explored, providing insights into more effective thermal treatment methods. The study suggests that the natural antimicrobial compounds in cinnamon may reduce the intensity of thermal treatments needed for pathogenic bacteria, contributing to better retention of product quality.

Summary: This study evaluated the thermal resistance of Salmonella and L. monocytogenes in desiccated shredded coconut (DSC), and the suitability of Enterococcus faecium as a surrogate. The results showed that the thermal tolerance of Salmonella and L. monocytogenes in DSC varied with water activity, and E. faecium can serve as an appropriate surrogate for Salmonella during thermal processing of DSC.
