Tartary buckwheat protein hydrolysates enhance the salt tolerance of the soy sauce fermentation yeast Zygosaccharomyces rouxii

Yun-Cheng Li et al.

Summary: The supplementation of Tartary buckwheat protein hydrolysates with a molecular weight of 1-300 kDa significantly improved the salt tolerance of soy sauce aroma-producing yeast Z. rouxii by promoting cell growth and fermentation. The HM-2 fraction aided in K+ accumulation, cytosolic Na+ removal, glycerol accumulation, cell membrane integrity, mitochondrial membrane improvement, and decreased intracellular ROS accumulation.

Metabolic potential of microbial community and distribution mechanism of Staphylococcus species during broad bean paste fermentation

Yun Jia et al.

Summary: This study investigated the metabolic potential of microbial community and the distribution mechanism of Staphylococcus species during broad bean paste (BBP) fermentation using a metagenomics approach. The findings suggested that Staphylococcus, Bacillus, Weissella, Aspergillus, and Zygosaccharomyces were key populations responsible for substrate alteration and flavor biosynthesis in BBP. The dominance of Staphylococcus, especially S. gallinarum, was linked to adaptation to environmental conditions and congeneric competition among Staphylococcus species, shaping their ecological distributions.

Physicochemical Characteristics and Microbial Communities in Gochujang, a Traditional Korean Fermented Hot Pepper Paste

Jung-A Ryu et al.

Summary: This study identified the physicochemical characteristics and microbial communities of gochujang and investigated the interrelationship between them before and after fermentation. The microbial genera in gochujang changed significantly after fermentation, with Bacillus becoming predominant among bacteria and Zygosaccharomyces and Millerozyma dominating among fungi. The high level of amino-type nitrogen before fermentation was related to the abundance of specific bacteria, while the flavor of gochujang after fermentation was influenced by the abundance of certain fungi. This analysis provides insights into the factors affecting the quality of gochujang.

Fermentation characteristics and bacterial dynamics during Chinese sauerkraut fermentation by Lactobacillus curvatus LC-20 under varied salt concentrations reveal its potential in low-salt suan cai production

Jiale He et al.

Summary: Salt concentration has significant effects on the growth of Lactobacillus and pH during suan cai fermentation, with 1% salt treatment showing the best results according to sensory scoring. Salt concentration also impacts nitrite content in the fermentation system, with higher levels in low salt treatments initially, gradually decreasing over time.

Increasing saltiness perception and keeping quality properties of low salt bread using inhomogeneous salt distribution achieved with salt agglomerated by waxy starch

Antonio Roberto Giriboni Monteiro et al.

Summary: The study found that using salt agglomerates made with waxy starch can enhance the saltiness perception of bread with reduced sodium content, while maintaining most of the quality parameters of the dough. Incorporating salt agglomerates resulted in a perception of saltiness that was similar to the control group despite a 30% reduction in salt content.
