Structural and functional modification of food proteins by high power ultrasound and its application in meat processing

Dacheng Kang et al.

Summary: High power ultrasound (HPUS) is recognized as a green, physical and non-thermal technology in improving the safety and quality of foods by modifying the structure and functional properties of food proteins. HPUS treatment significantly affects the conformation and structure of proteins, leading to improvements in solubility, interfacial properties, viscosity, gelation, and flavor binding properties. In meat processing, HPUS can modify the structure of myofibrillar protein (MP) to enhance quality, develop low fat and/or salt products, and extend shelf life.

Myofibrillar Protein Cross-Linking and Gelling Behavior Modified by Structurally Relevant Phenolic Compounds

Anqi Guo et al.

Summary: This study investigated the effects of six phenolic compounds on myofibrillar protein gelation, finding that EGCG has a strong elastic-promoting effect, while monophenols and diphenols are more conducive to increasing the strength of protein gels, and the flavanol structure appears to interfere with protein gel structure development.

Generation of Sarcoplasmic and Myofibrillar Protein-Bound Heterocyclic Amines in Chemical Model Systems under Different Heating Temperatures and Durations

Qiaochun Chen et al.

Summary: Through UPLC-MS/MS analysis, it was found that different heating conditions can lead to variations in the types and amounts of protein-bound HAs in muscle proteins, with beta-carbolines being the dominant category. The study also revealed that there were significant differences in bound HAs at higher temperatures, with samples showing more variations with longer durations at the same temperature.

Effects of (-)-Epigallocatechin-3-gallate on the Functional and Structural Properties of Soybean Protein Isolate

Yaohui You et al.

Summary: In this study, soy protein isolate (SPI) was noncovalently modified by (-)-epigallocatechin-3-gallate (EGCG), leading to an improvement in its foaming, emulsifying, and antioxidant properties. The interaction between SPI and EGCG was found to involve hydrophobic force and hydrogen bonds, resulting in looser SPI structure and more active groups exposed. This modification process enhanced the functional properties of SPI significantly.

Formulation and characterization of zein/chitosan complex particles stabilized Pickering emulsion with the encapsulation and delivery of vitamin D3

B. R. Shah et al.

Summary: In this study, zein/chitosan complex particles were used to stabilize Pickering emulsions for encapsulation and delivery of vitamin D-3. The optimum ratio of particles was determined, and the stability and release profile of the emulsions were evaluated under different oil fractions. The results suggest that the prepared emulsions can serve as efficient delivery systems for various industries.

Modification of functional, rheological and structural characteristics of myofibrillar proteins by high-intensity ultrasonic and papain treatment

Amir Amiri et al.

Summary: In this study, the effects of sonication duration and papain enzyme treatment on myofibrillar proteins were investigated. It was found that longer sonication time and enzyme treatment contributed to improvements in water holding capacity, solubility, foaming, and emulsifying properties, while also causing changes in the proteins' secondary structure. Additionally, the combination of papain treatment and shorter sonication time resulted in the highest values for surface hydrophobicity, specific surface area, net charge, storage modulus, solubility, and water holding capacity. Conversely, longer sonication time showed reductions in solubility, water holding capacity, and surface hydrophobicity, as well as increases in particle size distribution and protein turbidity.
