Improving the texture properties and protein thermal stability of Antarctic krill (Euphausia superba) by L-lysine marination

Junxin Lin et al.

Summary: The study demonstrated that pre-soaking with L-lysine solution improved the texture characteristics and reduced the cooking loss of Antarctic krill after heat treatment. Lysine effectively protected the structural integrity of Antarctic krill protein, enhancing its thermal stability during thermal processing.

Evaluating the effect of cooking temperature and time on collagen characteristics and the texture of hog maw

Yan-Yan Zheng et al.

Summary: This study evaluated the texture and collagen characteristics of hog maw cooked at different temperatures and times, finding that the degradation of Type I collagen played a major role in improving the sensory and textural properties of the cooked hog maw. The results indicated that cooking temperature and time significantly affected the texture and collagen solubility of hog maw.

Water status evolution of pork blocks at different cooking procedures: A two-dimensional LF-NMR T1-T2 relaxation study

Yu Song et al.

Summary: The research found that steamed meats had lower cooking loss and shear force, but higher redness, proton relaxation intensity, and proton density compared to boiled meats; differences in water distribution between the two cooking procedures appeared at around 40 degrees Celsius, with the most significant difference at 80 degrees Celsius; steaming resulted in more muscle structure damage and protein denaturation compared to boiling.

Preliminary Evaluation of a Novel Microwave-Assisted Induction Heating (MAIH) System on White Shrimp Cooking

Yi-Chen Lee et al.

Summary: The study evaluated the use of microwave-assisted induction heating (MAIH) system for cooking white shrimp, finding that longer heating times at specific temperatures could fully cook and sterilize the shrimp samples without contamination. It was recommended to heat white shrimp at 130 degrees C for 80 s or at 90 degrees C for 100 s for best results in appearance, microbial safety, and cook loss. This novel MAIH technology allows for post-packaging heating and sterilization of food products, eliminating post-pollution issues.

Effects of heat treatments on texture of abalone muscles and its mechanism

Man-Man Yu et al.

Summary: The study aimed to develop suitable heating conditions and understand the mechanism of texture changes in abalone muscles. Results showed that mild heat treatments increased shear force and hardness, while higher temperatures or longer heating times led to significant decreases in these properties. Protein denaturation and degradation were observed in cooked abalone muscles, which also resulted in changes in microstructure and water holding capacity.

Effects of salt and heat treatment on the physicochemical properties, microstructure, secondary structure, and simulated in vitro gastrointestinal digestion of duck egg white

Xuejing Gao et al.

Summary: Heat treatment at 100 degrees C results in higher in vitro digestibility compared to that at 121 degrees C. Gels with low hardness, large pores, and rough textures are easier to digest by pepsin and release more peptides. Liquid chromatography and tandem mass spectrometry (LC-MS/MS) indicated that the number of different types of peptides and specific peptides increased with the salting time and temperature of the DEW during gastric digestion.

Hossein Haghighi et al.

Summary: This study showed that temperature has a major impact on the physicochemical properties of sous vide cooked chicken breast fillets, while cooking time plays a minor role. Increasing temperature led to higher cooking loss, lipid oxidation, and pH, while increasing time affected mainly moisture content, cooking loss, and color.
