Volatile Composition and Sensory Characterization of Dry White Wines Made with Overripe Grapes by Means of Two Different Techniques

Volatile composition of Spanish red wines: effect of origin and aging time

Summary: This study investigated the volatile profile of red wines from different Spanish Protected Designations of Origin (PDO) and found the compounds that allowed differentiation. The results showed that Ribera del Duero (RD) wines, made mainly with Tempranillo grape variety, had higher content of compounds responsible for fruity, floral, and oak wood aromas, while Bierzo (BI) wines, made with Mencia grape variety, had higher content of oxidation volatile compounds. The study also found that different aging categories of wines had different aroma profiles, with young and short-aged wines richer in fruity aroma compounds, and crianza and reserve wines richer in positive oak wood aromas.

Microwave-assisted maceration and stems addition in Bonarda grapes: Effects on wine chemical composition over two vintages

Summary: This study evaluated the combined effect of microwave-assisted extraction and stem additions on the chemical composition of Bonarda wines. The results showed that stem additions increased tannin content, while microwave-assisted extraction improved phenolic extraction and polymeric pigments formation, enhancing wine color. In addition, the combined strategies increased polysaccharides extraction and modified the volatile profile of wines.

Combined effects of the vessel type and bottle closure during Chilean Sauvignon Blanc wine storage over its volatile profile

Summary: This study investigated the volatile compound profiles of Sauvignon Blanc wine during maturation in different vessels and bottled with different closures. The results showed that wines stored in stainless steel tanks had the highest contents of volatile compounds, and wines with screwcaps had the highest contents of volatile compounds among the different closures. Moreover, the use of screwcaps masked the differences originating from wine composition during maturation in vessels other than stainless steel.

Summary: The study evaluated the impact of co-inoculation of H. vineae and T. delbrueckii with S. cerevisiae on the quality of wine. Results showed that co-inoculation treatments increased the concentrations of desired aroma compounds and decreased levels of acetic acid and biogenic amines. The 2:8 inoculation ratio of H. vineae and T. delbrueckii achieved the highest levels of major ethyl esters and the lowest level of acetic acid. Wines with co-inoculation had lower levels of biogenic amines, especially tyramine, which increased with the proportion of H. vineae.
