Physicochemical properties of reduced-salt cured pork loin as affected by different freezing temperature and storage periods

Summary: This study evaluated the functional properties of reduced-salt pork meat products made from pre-rigor pork loin treated with different freezing temperatures. The results showed that pre-rigor cured pork loins had similar characteristics to post-rigor pork loins, and could be stored for a certain period of time at different freezing temperatures without any detrimental effects.

Physico-chemical and sensory qualities of Iberian sliced dry-cured loins from various commercial categories and the effects of the type of packaging and refrigeration time

Summary: The physico-chemical characteristics and sensory attributes of Iberian sliced dry-cured loin from three commercial categories were evaluated during long-term storage, showing higher antioxidants and fatty acids in the Black and Red categories at the end of storage. Additionally, the slices stored in MAP preserved alpha-tocopherol better, but showed increased lipid oxidation compared to vacuum packaging after 8 months. Sensory evaluation revealed that marbling and texture attributes were affected by commercial category, with insignificant influence from packaging and storage time.
