Summary: This study evaluated the impact of HP, FTC, and GP treatments on the protein digestibility of brown rice. Results showed that FTC-4 treatment enhanced digestibility, and G24P treatment was identified as a better choice for amino acid supplementation. Changes in protein properties due to treatments were found to be helpful in explaining the differences in protein digestibility.

The texture of freeze-thaw cycle treated brown rice was most similar to white rice, while germination-parboiling treatment resulted in a higher glycemic index compared to other treatments.
