Dye-protein interactions between Rhodamine B and whey proteins that affect the photoproperties of the dye

Summary: This study investigated the fluorescence properties of Rhodamine B (RhB) in the presence of whey proteins under alkaline conditions. The results showed the existence of interactions between dye and protein, which could be disrupted by alkali, while protein denaturation affected the complexity of these interactions. RhB was also found to quench the tryptophan fluorescence of whey proteins and form nonfluorescent Trp-RhB complexes, which might explain the irreversible binding of RhB to thermal-induced whey protein aggregates.
