Production of customized food through the insertion of a formulated nanoemulsion using coaxial 3D food printing

Preparation and characterization of surimi-based imitation crab meat using coaxial extrusion three-dimensional food printing

Summary: This study introduces a novel approach of using coaxial extrusion 3D food printing to implement the filament structure of imitation crab meat by coating potato starch solution on the surimi. Experiments conducted to determine the optimal concentration revealed that a 12% PS solution yielded the best results in terms of printing characteristics, water-holding capacity, and cooking loss. Additionally, this study showcases the use of rectilinear and concentric patterns to alter the internal texture of the 3D-printed imitation crab meat.

Post-processing and printability evaluation of red ginseng snacks for three-dimensional (3D) printing

Summary: The study investigated the impact of different types of starch matrix and post-processing conditions on the physical properties of 3D printed functional snacks. Results showed that high amylose potato starch exhibited the highest shear modulus and the best printing performance, while 10% potato starch provided optimal dimensional stability and printing resolution. The research suggested that freeze-drying as a post-processing technique could be a promising tool for modifying the texture of 3D printed food.
