Considering the traceability awareness of consumers: should the supply chain adopt the blockchain technology?

Zhi-Ping Fan et al.

Summary: This paper studies the optimal pricing strategies of a supply chain considering the traceability awareness of consumers in different scenarios, and discusses the conditions for adopting blockchain technology in the supply chain. The results show that the adoption of blockchain technology in the supply chain is conditional and depends on factors such as consumer traceability awareness, production costs, and technology costs. The paper also suggests that under certain conditions, a revenue sharing contract can improve the performance of a supply chain that adopts blockchain technology.

Increasing the effectiveness of ecological food signaling: Comparing sustainability tags with eco-labels

Valdimar Sigurdsson et al.

Summary: Research shows that unverified sustainability tags are more valued by consumers compared to actual awarded eco-certificates, leading to a higher willingness to pay for fish products with sustainability tags. Consumers are generally unfamiliar with frequently used seafood eco-labels like the Aquaculture Stewardship Council (ASC) and Marine Stewardship Council (MSC), which contributes to the increase in willingness to pay being influenced by perceived familiarity. Sustainability tags are rated higher in familiarity compared to eco-labels.

Impact of organic and protected designation of origin labels in the perception of olive oil sensory quality

Sara Spognardi et al.

Summary: This study investigates the behavior and habits of consumers from central-southern Italy in relation to extra virgin olive oil consumption, finding that they prefer local olive oils and are positively influenced by PDO/organic certification, with price not being a decisive factor in purchasing decisions. The tasting panel results show that experts prefer organic olive oil, semi-experts are influenced by the PDO brand, and non-experts tend to buy EVOO despite being positively influenced by the PDO brand and negatively by organic certification.
