Chemical characterization of Cassia fistula polysaccharide (CFP) and its potential application as a prebiotic in synbiotic preparation

Summary: The study investigated the effect of Cassia fistula polysaccharide (CFP) on probiotic strains and found that high concentrations of CFP promoted the growth of L. casei, indicating its potential as a prebiotic. Additionally, CFP was shown to regulate nitric oxide synthesis in macrophages. The use of CFP also significantly shortened the fermentation period for cultured milk production.
