Hydro- and aerogels from ethanolic potato and whey protein solutions: Influence of temperature and ethanol concentration on viscoelastic properties, protein interactions, and microstructure

Summary: This study investigates the combined effects of heat and ethanol treatment on hydrogel formation by whey and potato protein isolates. It is found that increasing ethanol concentration can modify the textural properties of the gels. Whey and potato protein form very different gels in the presence of ethanol. The type of protein interactions formed in the hydrogels affects the textural properties of the resulting aerogels.

Insights into the formation of konjac glucomannan gel induced by ethanol equilibration

Summary: Alcogels, semi-solid alcohol-containing products, have been attracting more interest recently. A study on the structural and physicochemical properties of konjac glucomannan (KGM) gels equilibrated in different ethanol concentrations showed that increasing ethanol concentration leads to stronger gels with higher thermal decomposition temperatures. The results suggest that KGM gels have promising potential in developing innovative semi-solid alcohol-containing food products under controlled concentrations of hydrocolloid and ethanol.

How hydrocolloids can control the viscoelastic properties of acid-swollen collagen pastes

Summary: The study investigated the effects of different hydrocolloids on the rheological and thermal properties of collagen pastes. It was found that the addition of methylcellulose, hydroxypropylmethylcellulose, high and medium molecular weight guar gum increased the storage modulus of collagen pastes, while the addition of sodium carboxymethylcellulose increased the loss modulus. The hydrocolloid additives also decreased the elastic properties of the pastes.

Acid/ethanol induced pectin gelling and its application in emulsion gel

Summary: The study proposed an acid-induced pectin gelling mechanism in a 25% ethanol system for constructing emulsion gel system. Differences in structure and properties between HMP and LMP were investigated, with HMP showing superior gelling performance. Molecular weight, neutral sugar side chains, and zeta potential were found to play key roles in the compact gel network construction of HMP. Emulsions with 25% ethanol exhibited gelling properties, and the freeze-thaw stability of pectin emulsions was improved by the stable structure of HMP gel during the cycle.
