Effect of food processing on reduction and degradation pathway of pyrethroid pesticides in mackerel fillet (Scomberomorus commerson)

The Effect of Microwave Baking Conditions on the Quality of Biscuits and the Control of Thermal Processing Hazards in the Maillard Reaction

Summary: The study explored the influence of microwave power and microwave time on the formation of thermal processing hazards (TPHs) and their precursors in microwave-baked biscuits. The results showed that the content of TPHs increased linearly with the extension of microwave time and microwave power. 3-Deoxyglucosone may directly or indirectly participate in the formation of other TPHs. The study also found a correlation between sensory characteristics and the content of TPHs, and microwave baking can effectively reduce the generation of TPHs.

Acrylamide and 5-hydroxymethylfurfural in thermally treated non-wheat flours and respective breads

Summary: The first report on the impact of dry and wet heat treatment on acrylamide content in flours and breads showed that dry heating increased acrylamide content in non-wheat flours, while hydrothermal heating had minimal effect. Acrylamide formation in breads may be linked to the presence of 5-hydroxymethylfurfural in the flours.

The influence of consecutive use of different oil types and frying oil in French fries on the acrylamide level

Efficient control of acrylamide in French fries by an extraordinarily active and thermo-stable L-asparaginase: A lab-scale study
