Plant-Based Alternative Products: Are They Healthy Alternatives? Micro- and Macronutrients and Nutritional Scoring

Marcel Pointke et al.

Summary: In recent decades, there has been a global increase in demand for plant-based alternative products. This study compares plant-based meat and cheese products with their animal-based counterparts. It was found that plant-based meats primarily use soy and wheat as protein sources, while plant-based cheeses have lower protein content compared to traditional cheeses. Some nutritional aspects, such as iron, vitamin E, and vitamin K, are better covered by plant-based alternatives. However, the high level of processing and high salt content highlight the need for nutritional guidelines for these products.

Consumers' associations, perceptions and acceptance of meat and plant-based meat alternatives

Fabienne Michel et al.

Summary: The study found that while meat is associated with positive terms, meat alternatives are viewed more negatively. Meat alternatives should closely resemble meat in taste, texture, and ease of preparation to be more appealing. Results from direct comparisons show that meat alternatives are perceived similarly to processed meat products. Eating meat alternatives is perceived to be more appropriate in situations where one eats alone or with family and friends.

Less refined ingredients have lower environmental impact e A life cycle assessment of protein-rich ingredients from oil- and starch- bearing crops

Summary: In the future, plant-based protein foods will replace meat-based protein foods. Reducing the degree of refining significantly reduces environmental impact, with drying remaining the largest contributor. Mild aqueous fractionation increases protein yield and lowers global warming potential.

Distinguishing meat reducers from unrestricted omnivores, vegetarians and vegans: A comprehensive comparison of Australian consumers

Lenka Malek et al.

Summary: Meat reducers, a growing but understudied subgroup in Australia, exhibit unique meat consumption behaviors, beliefs, and importance placed on egoistic food choice factors. Strong beliefs in the adequacy of meat-free diets and lower importance placed on egoistic food choice factors are predictors of meat reducers compared to unrestricted omnivores. This study provides insight on addressing concerns and motivations of consumers with distinct meat consumption preferences.

Plant-Based Meat Alternatives: Motivational Adoption Barriers and Solutions

Steffen Jahn et al.

Summary: This narrative review explores the motivational barriers to adopting plant-based meat alternatives (PBMA), focusing on food neophobia, social norms and rituals, as well as conflicting eating goals that prevent consumers from switching to a plant-based diet. Solutions are discussed to counter these barriers based on research findings in consumer psychology and marketing.

A Consumer Segmentation Study for Meat and Meat Alternatives in Switzerland

Franziska Goetze et al.

Summary: This study identified six distinct consumer groups related to meat and meat alternatives, covering all types of consumers, from uncompromising meat-eaters to health-conscious meat avoiders. The results showed that meat alternatives can be a complementary component in one's diet, not just a substitute for meat. The study provides useful information for the food industry in producing and marketing meat and meat alternatives to different target groups.

Meat substitution in burgers: nutritional scoring, sensorial testing, and Life Cycle Assessment

Sergiy Smetana et al.

Summary: The study aimed to compare the environmental impact, sensory properties, and nutritional profile of beef burgers with alternative burgers based on plant, insect, and mycoprotein biomass. Results showed that alternative burgers are more environmentally friendly than beef burgers, but only insect-based and soy-based options had satisfying sensory or nutritional properties. Pea-based and mycoprotein-based burgers were perceived as average in terms of environmental and sensorial perspectives. The study established a sustainability differentiation system for meat analogs in convenience products using a multicriteria framework including nutrient scoring, sensory testing, and Life Cycle Assessment.

Consumer preferences for meat blended with plant proteins - Empirical findings from Belgium

Adriano Profeta et al.

Summary: High levels of meat consumption are criticized for ethical, environmental, and social reasons, with plant-based meat substitutes identified as healthier protein sources. Consumers in many countries have a strong attachment to meat, but for those not interested in vegan alternatives, meat blended with plant-based proteins could offer a more sustainable food consumption behavior. The health perception plays a significant role in determining the choice between meat blended with plant-based proteins and traditional meat products.
