Inhibitory effects of L-3-phenyllacitc acid on the activity of mushnroom pholyphenol oxidase

Summary: This study demonstrated that L-3-phenyllactic acid could inhibit the activity of polyphenol oxidase, leading to a decrease in enzyme activity and browning of fresh-cut Agaricus Bosporus. The results of fluorescence quenching and molecular docking revealed the interaction between L-3-phenyllactic acid and polyphenol oxidase.

Cloning and characterization of a phosphomevalonate kinase gene from Sanghuangporus baumii

Summary: Sanghuangporus baumii, a macrofungus used in traditional Asian medicine, has low triterpenoids content in its fruiting body. This study successfully cloned and analyzed a key enzyme gene, PMK, in S. baumii. The research revealed that during fermentation culture, biomass and PMK gene expression peaked on day 18, leading to stabilized triterpenoids content at 20.8 mg/g.
