Factors affecting the capsaicinoid profile of hot peppers and biological activity of their non-pungent analogs (Capsinoids) present in sweet peppers

Virgilio Gavicho Uarrota et al.

Summary: Capsaicinoids, as acid amides of C-9-C-11 branched-chain fatty acids and vanillylamine, along with their non-pungent analogs, capsinoids, are important chemical compounds in Capsicum annuum with various health benefits. Factors such as light intensity, heat treatments, environment, genotype, node position, and fruits maturity stage can affect capsaicinoid content and pungency in peppers. Future research should focus on understanding changes in capsinoids during pre and post-harvest management, as well as exploring genetically modified sweet peppers with functional pAMT for specific pungency levels.

Influence of intra and inter species variation in chilies (Capsicum spp.) on metabolite composition of three fruit segments

Tilen Zamljen et al.

Summary: In this study, it was found that seeds had the highest dry weight and an average water content of 60%, while placenta and pericarp had higher water content. Different cultivars of peppers showed significant variations in ascorbic acid, citric acid, and total phenolic content. The placenta had significantly higher phenolic content compared to seeds.

Effect of Water Supply on Physiological Response and Phytonutrient Composition of Chili Peppers

Stella Agyemang Duah et al.

Summary: Water supply plays a crucial role in the growth and phytonutrient composition of chili peppers, with different water treatments affecting physiological responses and phytonutrient production in the cultivars. While pepper cultivars exhibit varying responses to water treatments, some cultivars show a more uniform and stable composition across all treatments.
