Relationships between dough thermomechanical parameters and physical and sensory properties of gluten-free bread texture during storage

Summary: This study evaluated the effects of replacing rice flour with chickpea flour and their combinations with psyllium on dough properties and gluten-free bread quality. The results suggest that replacing rice flour with chickpea flour improved bread acceptance, while adding psyllium increased dough consistency to inhibit bread crumbling during storage. Mixolab analysis shows promise in predicting gluten-free bread quality over a 7-day storage period.

Ultrasonic characterization of salt, moisture and texture modifications in dry-cured ham during post-salting

Summary: This study investigates the use of non-destructive ultrasound to monitor changes in ham post-salting. The results indicate a strong correlation between ultrasonic velocity and ham weight, salt, and moisture content, while ham hardness remains relatively constant post-salting. Ultraosund velocity proves to be a reliable parameter for monitoring internal changes in ham during post-salting in a non-destructive way.
