Characterisation of black soldier fly larva protein before and after conjugation by the Maillard reaction

Summary: Black soldier fly has been proposed as a sustainable protein source for food and feed. This study focused on the conjugation and characterization of black soldier fly larvae proteins and conjugates. The results showed that inducing the Maillard reaction with glucose can improve the thermal properties of the protein, increasing its stability.

Indigenous Knowledge about Consumption of Edible Insects in South Africa

Summary: Edible insects are a traditional practice rich in nutrients, playing an essential role in improving the livelihoods of people in rural areas of South Africa. While most residents consume insects in Limpopo, there is a decline in entomophagy in KZN, possibly due to western dietary influences, discomfort associated with insect consumption, and a decrease in wild insect availability. Mopane worms and termites are the preferred insect species in Limpopo and KZN, respectively.

Hermetia illucens Protein Conjugated with Glucose via Maillard Reaction: Antioxidant and Techno-Functional Properties

Summary: This study investigated the effect of conjugation via the Maillard reaction on the antioxidant and techno-functional properties of black soldier fly larvae protein concentrate. The results showed that higher temperatures and longer reaction times led to increased browning intensity and antioxidant activity in the conjugates. Principal component analysis allowed discrimination of the samples based on the heating temperature, demonstrating practical means to enhance the functionality of novel edible insect proteins for food applications.

Nutritional compositions of two edible insects: Oryctes rhinoceros larva and Zonocerus variegatus

Summary: Insects such as Oryctes rhinoceros larva and Zonocerus variegatus are rich in nutrients and can be potential sources of food with high nutritional value. Oryctes rhinoceros larvae have higher levels of crude protein and carbohydrates, while Zonocerus variegatus have higher levels of crude lipids. Both insects contain rich mineral components and their anti-nutrient values are within tolerable levels, making them good sources of macro and micronutrients. Oryctes rhinoceros may be a better source of nutrients due to its valuable macromolecule contents.
