Characterization of Berry Pomace Powders as Dietary Fiber-Rich Food Ingredients with Functional Properties

Microstructure, physicochemical properties, and adsorption capacity of deoiled red raspberry pomace and its total dietary fiber

Summary: The study investigated the microstructure, physicochemical properties, and adsorption capacities of deoiled red raspberry pomace (DRP) and its total dietary fiber (DRPF) to evaluate their potential use as functional food ingredients. The chemical composition showed that both DRP and DRPF are mainly composed of lignin. While DRP exhibited higher in vitro cholesterol and glucose adsorption capacities, DRPF showed better adsorption capacity of toxic ions, indicating that both are ideal supplements for dietary fiber with different strengths in specific applications.

Scanning electron microscopy and Fourier-transformed infrared spectroscopy analysis confirmed changes in the structure of MBDF caused by the modification methods.
