Effects of the main ingredients of the fermented food, kimchi, on bacterial composition and metabolite profile

Hye Seon Song et al.

Summary: The main ingredients of kimchi play a crucial role in determining the microbial community and metabolite composition during food fermentation. Microorganisms such as Leuconostoc gelidum, Weissella kandleri, and Lactobacillus sakei groups were found to be primarily distributed in kimchi cabbage and young radish-based foods. The metabolite profiles varied depending on the sample type, suggesting that the main ingredients significantly impact the fermentation process.

Investigating the microbiota of fermented fish products (Pla-ra) from different communities of northeastern Thailand

Rutchanee Rodpai et al.

Summary: DNA sequencing was used to investigate the microbial diversity of fermented freshwater fish samples from three provinces in northeastern Thailand. Lactic-acid and halophilic bacterial genera were dominant, with variations in salt concentrations, raw materials, and fermentation processes influencing the microbial communities. Optimizing the fermentation process with dominant bacterial taxa may improve food quality and flavor control for industrial applications.

Novel approaches for the identification of microbial communities in kimchi: MALDI-TOF MS analysis and high-throughput sequencing

Eiseul Kim et al.

Summary: A study compared culture-dependent and culture-independent methods for identifying microbial community changes during kimchi fermentation. Both methods identified Lactobacillus-related genera, Leuconostoc, and Weissella as predominant microorganisms, with the culture-independent method additionally identifying non-lactic acid bacteria and yeasts. The culture-dependent method could identify species level and predominant species in viable cell communities, while culture-independent method provided a more comprehensive view of the microbial ecology in fermented kimchi.
