Virgin Olive Oils from Super-High-Density Orchards in California: Impact of Cultivar, Harvest Time, and Crop Season on Quality and Chemical Composition

Degradation of squalene and alpha-tocopherol was inhibited by low temperatures, with 4 degrees C being the best temperature for a 3-year conservation and -18 degrees C being optimal for preserving organoleptic properties. The research provides new insights for EVOO manufacturers and traders on efficient storage methods for maintaining characteristics of freshly extracted oils for extended periods of time.
