Comparison of antioxidant activity assays in fresh purple waxy corn (Zea mays L.) during grain filling

Jung-Tae Kim et al.

Summary: This study compared five different assays to determine the antioxidant activity of fresh purple waxy corn during grain filling. The results showed significant correlations between different assays and anthocyanin content, but these correlations varied depending on the developmental stage of the corn kernel.

Accumulation of phenolics, antioxidant and antiproliferative activity of sweet corn (Zea mays L.) during kernel maturation

Xiaodan Hu et al.

Summary: The study found that the phenolic and flavonoid contents in different genotypes of sweet corn kernels increased from 10 to 30 days after pollination, with higher levels in the YT28 genotype possibly due to higher expression of the CHS gene. Sweet corn has competitive phenolic contents, antioxidant capacities, and antiproliferative abilities, with its bioactive potential and nutritional value increasing during the maturation process.

Reducing post-harvest losses and improving quality in sweet corn (Zea mays L.): challenges and solutions for less food waste and improved food security

Felipe Becerra-Sanchez et al.

Summary: The demand for fresh-cut fruit and vegetables is rising due to global population growth and interest in plant-based diets. Sweet corn, harvested before maturity, is highly perishable and requires effective handling to maintain its taste, aroma, and color. Control of temperature and packaging films can significantly reduce post-harvest losses in sweet corn.
