Effect of Coix Seed Extracts on Growth and Metabolism of Limosilactobacillus reuteri

Zhoujie Yang et al.

Summary: This study evaluated the effects of coix seed extract on the growth and metabolism of Limosilactobacillus reuteri. The results showed that coix seed extract can increase the growth and acidifying activity of L. reuteri, enhance the biosynthesis of lactic acid and acetic acid, and improve carbohydrate metabolism, amino acid metabolism, and nucleotide metabolism activities. Furthermore, coix seed extract increased the accumulation of bioactive metabolites.

Reduction of green off-flavor compounds: Comparison of key odorants during fermentation of soy drink with Lycoperdon pyriforme

Ann-Kathrin Nedele et al.

Summary: Fermentation of soy drink with Lycoperdon pyriforme significantly reduced green off-flavors and improved aroma profiles, while nutritional parameters remained consistent. Odorants such as hexanal, (E)-2-nonenal, and (E,E)-2,4-decadienal were decreased, with hexanal even falling below its odor threshold, correlating with improved sensory perception.

Umami potential of fermented beverages: Sake, wine, champagne, and beer

Charlotte Vinther Schmidt et al.

Summary: The study measured the FAA contents of selected fermented beverages using UHPLC and found that sakes, beers, wines, and champagnes with long yeast contact contain significant amounts of free glutamate. The results suggest that combining these fermented beverages with food rich in free nucleotides can achieve umami synergy.

Metabolomics strategy for revealing the components in fermented barley extracts with Lactobacillus plantarum dy-1

Yansheng Zhao et al.

Summary: Fermentation of barley flour with Lactobacillus plantarum dy-1 led to a gradual slowing down of the process until termination, with decreases in saccharides, amino acids, nucleosides, and some organic acids, and the release of lipids and bioactive molecules. Metabolites were accumulated by L. plantarum dy-1 during fermentation. Characteristic components in the fermented barley aqueous extracts, including functional molecules, were identified through chemometrics analysis, providing insights for further research on functional bioactivities and applications.

Effect of solid-state fungal fermentation on the non-volatiles content and volatiles composition of Coffea canephora (Robusta) coffee beans

Vivien Chia Yen Tang et al.

Summary: The study evaluated the effects of fungal fermentation on green canephora coffee beans by examining changes in non-volatile parameters before roasting and volatile compounds after roasting. Differences in aroma compounds were observed between samples fermented by Aspergillus spp. and Mucor spp., with increased pyrazines in Aspergillus oryzae-fermented samples and higher levels of furans in Mucor plumbeus-fermented samples. Overall, fungal fermentation shows promise as a method for enhancing and modifying the flavor and aroma of coffee.

Sprouting of quinoa (Chenopodium quinoa Willd.): Effect on saponin content and relation to the taste and astringency assessed by electronic tongue

Diego Suarez-Estrella et al.

Summary: This study found that after 48 hours of quinoa sprouting, the saponins decreased to 0.086 mg/100 g, reducing the bitterness and astringency of quinoa. Changes in phenolic compounds seem to have a minor role in affecting the taste traits of sprouted quinoa.

Effect of lactic acid bacteria on mackerel (Pneumatophorus japonicus) seasoning quality and flavor during fermentation

Yueqi Zhou et al.

Summary: The study assessed the influence of lactic acid bacteria on the physicochemical characteristics of low-salt fermented mackerel seasonings, with a focus on key volatile compounds and their formation pathways. The flavor of LAB-fermented mackerel seasonings was found to be superior to traditional fish sauce, with specific strains of LAB impacting the formation of flavor substances. Analysis of key odor-active compounds and their correlations with sensory characteristics revealed compounds like (E)-2-nonenal and (E,E)-2,4-decadienal playing a role in overall odor profile.

Metabolomic evaluation of different starter culture effects on water-soluble and volatile compound profiles in nozawana pickle fermentation

Satoru Tomita et al.

Summary: Metabolomic characterization of lactic-fermented pickle of nozawana showed significant differences in chemical profiles with the use of different starter culture strains. Fermentation with Latilactobacillus curvatus resulted in a unique metabolite profile with higher levels of isothiocyanates and hexanoic acid and lower levels of certain acids and compounds. These variations in chemical profile may contribute to different qualities in fermented nozawana pickle products.
