The effects of genital myiasis on the diversity of the vaginal microbiota in female Bactrian camels

Likang Zhi et al.

Summary: This study found that the vaginal microbiota of Bactrian camels infected with genital myiasis had a higher diversity index and lower vaginal pH, but no significant differences were found in the abundance of dominant genera, indicating a certain stability. This provides a reference point for understanding the types of bacteria causing genital myiasis.

Effect of yeasts on food quality and safety and possibilities of their inhibition

Reda Riesute et al.

Summary: Yeasts play dual roles in food industry: beneficial in fermentation but potentially harmful in causing infections. Lactic acid bacteria and plant extracts can effectively inhibit yeast growth, showing potential for application in food industries to control unwanted yeast presence.

Frozen-dough baking potential of psychrotolerant Saccharomyces species and derived hybrids

Frederico Magalha et al.

Summary: Research has shown that Saccharomyces cerevisiae is sensitive to cold and freezing conditions in baking, while other species like S. eubayanus, S. jurei, and S. arboricola exhibit superior frozen dough fermentation capabilities, resulting in softer bread with improved proofing performance. Crossbreeding these psychrotolerant yeasts with baker's yeast has created hybrids with enhanced proofing capacities in fresh and frozen doughs compared to their parent strains, representing a potential technological advancement in baking.

Volatile compounds in Chinese steamed bread influenced by fermentation time, yeast level and steaming time

Jinzhong Xi et al.

Summary: The aim of this study was to investigate how volatile compounds of Chinese steamed bread (CSB) are influenced by yeast level, fermentation time and steaming time. The results showed that higher yeast level and longer fermentation time promoted the formation of yeast-metabolism-derived compounds, while increased fermentation time decelerated the generation of lipid oxidation compounds. Prolonged steaming time facilitated the production of specific compounds and promoted the loss of certain compounds.

Summary: This study isolated a novel bacterial strain producing Bacterial NanoCellulose (BNC) from Kombucha tea and utilized Response Surface Methodology (RSM) with Eucalyptus Biomass Hydrolysate (EBH) to achieve a high BNC yield. The results indicate that BNC membranes obtained from the new medium showed higher resistance to compression, cohesiveness, and resilience.
