Applicability of high-resolution NMR in combination with chemometrics for the compositional analysis and quality control of spices and plant-derived condiments

Eva Belmonte-Sanchez et al.

Summary: In recent years, the consumption of spices and plant-derived condiments has increased significantly due to new culinary trends, but they are highly vulnerable to adulteration and food fraud in current marketing channels. High-resolution nuclear magnetic resonance (NMR) is a powerful tool for studying the composition of spices and plant-derived condiments, with great potential for quality control applications.
