Summary: Hazelnut is an important nutrient for human health and its aroma components can serve as export criteria. This study compared aroma profiles of different hazelnut varieties and found that specific varieties have distinct aroma compounds, such as nonanal in Turkish varieties and 2(3H)-furanone in roasted samples. Turkish varieties like 'Aci' and 'Kalinkara' showed potential for having the highest amount of aromatic components in roasted hazelnuts.

Quality control of raw hazelnuts by rapid and non-invasive fingerprinting of volatile compound release

Summary: This study examines the use of Proton Transfer Reaction Mass Spectrometry (PTR-MS) rapid fingerprinting to predict the sensory quality of raw hazelnuts. It was found that non-compliant hazelnuts had higher concentrations of volatile organic compounds and that the method could accurately discriminate between samples with defective hazelnuts. Unsupervised data clustering of VOC fingerprints also provided a correct classification rate of over 90%.

Summary: Hazelnuts are rich in oleic acid and polyunsaturated fatty acids, providing high nutritional value, but are prone to oxidation and degradation reactions. Monitoring the changes in fatty acid profiles can differentiate characteristics of different hazelnut varieties and regions, while efficiently tracking the increase in free fatty acids and decrease in unsaturated free fatty acids versus esterified fatty acids over time.
