Effect of hydrocolloids on physicochemical properties, stability, and digestibility of Pickering emulsions stabilized by nanofibrillated cellulose

Summary: This study investigated the impact of hydrocolloids with different electrostatic characteristics on soybean oil emulsions stabilized by nanofibrillated cellulose. The results showed that ionic hydrocolloids had a more pronounced effect on the stability, viscosity, and lipid digestion of the emulsions compared to non-ionic ones, providing insights for the development of highly stable emulsion-based functional food products.

Approaches for Extracting Nanofibrillated Cellulose from Oat Bran and Its Emulsion Capacity and Stability

Summary: Pretreatment is a crucial step for the production of nanofibrillated cellulose as it improves efficiency, reduces cost, and decreases energy consumption. This study prepared nanofibrillated cellulose using various pretreatment processes and used it as an emulsifier for oil-in-water emulsions. Chemically pretreated nanofibrillated cellulose exhibited the smallest oil droplet diameter, while other pretreatments resulted in larger droplet sizes. Microwave pretreatment effectively minimized gravitational separation and all nanofibrillated cellulose emulsions showed low creaming indices.
