Carotenoid stability and aroma retention during the post-harvest storage of biofortified maize

Summary: Under high temperature and high oxygen permeability packaging materials, maize flour stored in laminated paper bags showed the lowest retention of carotenoids at only 16%; different milling methods affected the formation of volatile compounds, but not the degradation of carotenoids; maize flour stored in double-layered polyethylene bags exhibited the highest carotenoid retention and aroma stability.

The Burden of Malnutrition and Fatal COVID-19: A Global Burden of Disease Analysis

Summary: This study identified a potential link between population-level malnutrition and fatal COVID-19, particularly in low-income countries. High YLD rates for iron deficiency were moderately positively associated with CFRs for COVID-19 in low-income countries. Sub-Saharan African countries with high malnutrition indicators and elevated CFRs for COVID-19 were highlighted as particularly at risk. Food security, nutrition, and social protection should be prioritized in COVID-19 response plans in malnourished countries to reduce fatality rates.
