Synergistic Effect of Metagenome-Derived Starch-Degrading Enzymes on Quality of Functional Bread with Antioxidant Activity

Seyedeh Fatemeh Sadeghian Motahar et al.

Summary: This study screened a novel thermostable pullulanase from metagenomic data to improve the quality of functional bread. A cocktail of thermostable pullulanase and alpha-amylase was developed to enhance the antioxidant properties and texture of quinoa protein-enriched bread, showing promising results in terms of physical and sensory characteristics.

Comparison of Phenolic Contents and Scavenging Activities of Miang Extracts Derived from Filamentous and Non-Filamentous Fungi-Based Fermentation Processes

Aliyu Dantani Abdullahi et al.

Summary: The study found that Miang extracts fermented by non-filamentous fungi-based and filamentous fungi-based processes had higher phenolic contents and better antioxidant and anti-inflammatory activities compared to young and mature tea leaves. These fermented Miang extracts showed enhanced protection against hydrogen peroxide-induced ROS production in colorectal cells and inhibition of nitric oxide production induced by lipopolysaccharide, indicating their potential as natural bioactive functional ingredients for preventing free radical and inflammatory-mediated diseases.

Valorization of cassava waste for pullulan production by Aureobasidium pullulans MTCC 1991

Ravichandran Viveka et al.

Summary: The study evaluated the use of cassava waste for pullulan production from Aureobasidium pullulans MTCC 1991 in solid-state fermentation, identifying optimal conditions for maximum yield. The analysis focused on the effects of yeast extract, K2HPO4, (NH4)(2)SO4, MgSO4 center dot 7H(2)O, and NaCl on pullulan production. Results confirmed that cassava waste can be an effective carbon source for pullulan production.
