Improvement of functional couscous formulation using ancient wheat and pseudocereals

Summary: Traditional Turkish couscous was produced with einkorn bulgur instead of durum bulgur and supplemented with various grain flours. The addition of high levels of amaranth flour and quinoa flour increased the ash and fat content, while buckwheat flour and quinoa flour enhanced the antioxidant properties of couscous. Overall, couscous prepared with amaranth flour was preferred by sensory panelists.
