Trends in Vitamin C Consumption in the United States: 1999-2018

Mary Brauchla et al.

Summary: The study found that the decline in vitamin C intake is mainly due to a decrease in fruit juice consumption and a slight increase in whole fruit intake. While vitamin C intake increased in children/adolescents, it did not increase in adults, and the contribution from vegetables remained generally unchanged. The proportion of the population consuming vitamin C below the Estimated Average Requirement has increased.

Ammar B. Altemimi et al.

Summary: Infrared radiation (IR) showed more favorable effects on black lime juice compared to conventional thermal heating (CTH) by maintaining the nutrition and health benefits of the juice. IR treatment resulted in higher phenol content in juice and a decrease in antioxidant activity, while impacting ascorbic acid content and microbial activity.

Upper digestion fate of citrus pectin-stabilized emulsion: An interfacial behavior perspective

Rujun Wei et al.

Summary: This study found that emulsions stabilized by high concentration citrus pectin were more stable during digestion and had a lower release rate of free fatty acids compared to emulsions stabilized by low concentration citrus pectin. The thin absorbing layer of low concentration citrus pectin interface was easily replaced by bile salts, while the thick adsorbing layer of high concentration citrus pectin interface resisted the replacement of bile salts and enabled lipase adsorption.

Effects of pulsed electric field-assisted treatment on the extraction, antioxidant activity and structure of naringin

Debao Niu et al.

Summary: Pulsed electric field (PEF) treatment significantly improves the extraction yield of naringin from pomelo peel, with specific effects observed at an electric field intensity of 4 kV/cm and 30 pulses. Different PEF treatments impact the antioxidant activity of naringin, possibly due to changes in its structure. PEFF treatment alters the conformation of naringin without degradation, showing promise for enhancing extraction efficiency and modifying physicochemical properties in the future.

Bioactive Substances, Heavy Metals, and Antioxidant Activity in Whole Fruit, Peel, and Pulp of Citrus Fruits

Anna Czech et al.

Summary: The use of whole citrus fruits in the food industry can raise concerns about palatability or health among consumers due to the presence of valuable peel. Comparison of various citrus fruits showed that whole fruits have lower sugar content and higher levels of dietary fiber and phenolic compounds, including ferulic acid, compared to their pulps. Antioxidant potential was found to be higher in whole lemons, limes, and mandarins due to their higher content of ascorbic acid, tannins, and phenolic compounds. Lead and cadmium content in whole fruits, although higher than in the pulps, were below acceptable daily intake levels.

Effects of Fruit Load on Sugar/Acid Quality and Puffiness of Delayed-Harvest Citrus

Fangjie Xu et al.

Summary: This study aimed to determine the optimal tree fruit load level for delayed-harvest citrus under protected cultivation to achieve better flavor quality and reduce puffiness. The results showed significant negative correlations between leaf N level and flesh sucrose and glucose contents, as well as between branch P level and flesh citric acid contents; lower leaf N and branch P levels under relatively higher fruit load can increase flesh sucrose and glucose accumulation and slow down citric acid degradation, optimizing the sugar/acid ratio of fruits during delayed harvest.
